Almond milk and honey flan

Flan has always seemed to me a very useful dessert when guests come to home. Probably because they can and should be prepared in advance and because they also allow numerous accompaniments, from whipped cream to fresh fruit. This honey almond milk flan was the last I've had.

When it comes to celebrating something as a family, I usually resort to classic puddings, to those who always work at the table. However, at home I like to try new combinations and this one seemed, without a doubt, interesting. It does not have condensed milk, it does not have cream ... it does not even have caramel! Do you dare to try it?

Ingredients
  • ½ cup of honey (for the base)
  • 3 cups of almond drink
  • 6 L eggs, at room temperature
  • 1 cinnamon stick
  • 1½ teaspoons of vanilla essence
  • 3 tablespoons honey

Preparation
  1. We heat half a cup of honey in a saucepan over medium heat for 8 minutes or until bubbly and turns a dark amber color.
  2. Then, carefully, the we pour into the base of a 15cm round mold and turn it so that the honey covers both the bottom and the sides.
  3. We place the mold inside another source or larger tray with high walls to cook it in a bain-marie and reserve.
  4. Next we prepare the dough for the flan. For it we heat the milk with the cinnamon stick and cook it over medium-low heat for another 20 minutes, stirring frequently to prevent the milk from burning.
  5. While the milk simmers, we beat the rest of the ingredients for the flan in a large bowl.
  6. We pour the milk little by little in the bowl while we beat, until completely integrated.
  7. We place the dough in the mold using a strainer to filter it.
  8. Then we pour very hot water on the tray or platter until it reaches half the height of the pan.
  9. We cover the mold with aluminum foil and take to the oven at a medium height.
  10. We bake at 180ºC until the sides have set and the center shakes a bit, about 60 minutes.
  11. We take out of the oven, we remove the aluminum foil and we let it sit in a double boiler on the kitchen counter for 50 minutes.
  12. To finish, we remove the mold from the water, cover with transparent film and we let cool in the fridge One day to another.
  13. Before serving, we unmold the flan previously sliding a sharp knife along the edges of the mold.
