Almond cookies

During the weekend we like to enjoy a homemade biscuit or biscuit at home. Not long ago we tried these almond cookies that I had pending to share with you. Some cookies that are prepared with simple ingredients and in a simple way.

We don't need to complicate a lot to accompany coffee with a sweet bite like this. A bowl, an electric mixer, and a few ingredients are all you need to make these cookies. You can let them cool and eat them as is or decorate them with chocolate and flake salt to your liking! Try them and if you like, encourage yourself to prepare these curly tea pastries.

These almandra cookies are easy to make and perfect to treat ourselves to a sweet treat from time to time. Serve them with the coffee.

Ingredients
  • 160 g. ground almonds
  • 100 g. all-purpose flour
  • 75 g. of sugar
  • 1 teaspoon baking soda
  • 3½ teaspoons ground ginger
  • 1½ teaspoon ground cinnamon
  • 85 g. margarine at room temperature
  • 65 g. heather honey
  • Toasted almonds, dark chocolate and sea salt flakes for garnish (optional)

Preparation
  1. We preheat the oven to 180˚C.
  2. We beat the margarine and the sugar in a bowl until you get a creamy and smooth mixture.
  3. Then we add the almonds ground, flour, bicarbonate of soda, ground ginger, cinnamon and honey and beat at low speed until integrated. Then we put it in the fridge for 10 minutes.
  4. With the help of two spoons we take small portions of dough and we place them on a baking tray lined with parchment paper.
  5. We place an almond in the center of each one while slightly flattening the dough balls.
  6. Now, we bake 10 minutes or until the edges of the cookies begin to harden and the center remains soft.
  7. We turn off the oven, remove the tray and let rest cookies 5 minutes.
  8. Then the we go to a grid to cool completely.
  9. Meanwhile we melt the dark chocolate necessary to decorate the cookies. Finally we add the sea salt flakes.
  10. We keep them in a airtight container.
