You know how I like to treat myself to a sweet treat on the weekend. Having some cookies or pastries to enjoy with coffee in the middle of the afternoon is especially pleasant on gray days like the one we have today. And you are almond cookies with strawberry jam they are a fantastic alternative on days like this.

Why? Because they are so simple that you will never be lazy to prepare them. Almost as simple as mixing all its ingredients and shaping them with your hands; an activity in which you can involve the smallest of the house. They will be very proud to have participated!

These cookies have another point in their favor: can be customized. We have opted for a simple strawberry jam to "fill them up" but you can choose the one you like the most or do without it. The cookies do not have sugar (who would say it when tasting them) so you can find in the jam a great ally to give them an extra sweetness. Do you dare to try them?

Ingredients
  • 8 pitted dates
  • 1 cup of oatmeal
  • 1 cup of ground almonds
  • 5 tablespoons of extra virgin olive oil
  • ½ cup of almond drink
  • ½ teaspoon turmeric
  • ⅔ teaspoon bicarbonate
  • Strawberry jam

Preparation
  1. We soak dates in hot water for 5 minutes.
  2. Before we get to the dough we preheat the oven at 180ºC and line the baking tray with parchment paper or a silicone sheet.
  3. Now yes, we place in the blender glass all the ingredients except the jam and blend until obtaining a homogeneous dough.
  4. We lightly grease our hands with olive oil and we take small portions of dough and giving them a rounded shape. These balls should be about the size of a walnut.
  5. As we shape them, we place them on the oven tray, keeping 2 cm. distance between them.
  6. Then, using the greased index finger, we apply pressure on each of the balls to create a hole that we will fill with jam.
  7. We take the cookies to the oven for 20-25 minutes or until golden brown.
  8. To finish we remove the almond cookies from the oven and we let them cool on a rack before storing in an airtight container.
