The almond cake or tarta de Santiago, is a traditional dessert of Galician cuisine. The recipe consists mainly of almonds, sugar and eggs then to taste it is given more flavor with a touch of cinnamon or lemon zest.
La Santiago's cake It is made with a round shape and has the silhouette of the cross of Santiago on the upper part drawn with icing sugar. Its texture is grainy by the almond, very juicy and with a very good almond flavor.
It is a dessert suitable for celiacs, since it does not contain flour.

Ingredients
- 4 eggs
- 250 gr. ground almond
- 250 gr. sugar
- Lemon zest or
- Half a teaspoon of cinnamon
- Powdered sugar
Preparation
- In a bowl we put the ground almonds and the sugar, we mix and we put the eggs one by one and stirring and mixing well, until obtaining a fine dough.
- We put the lemon zest or cinnamon.
- We turn on the oven at 180ºC
- We take a round mold, spread it with a little butter and a little flour (so that it does not stick), fill the mold with the mixture and bake until it is cooked and lightly browned.
- We will check it after about 20-30 minutes by clicking with a toothpick in the center and if it comes out dry it will be ready, if it is not yet we will leave it for a few more minutes until it is ready.
- We take it out of the oven, let it warm and sprinkle with icing sugar.
- If you want to make a drawing of the cross of Santiago, on the Internet you can find the template, copy it and put it on top of the cake in the center, sprinkle with icing sugar, carefully remove the template and the silhouette of the cross will remain.
