Traditionally, during the month of December, typical Christmas sweets are served to visitors and relatives. There are as many sweets of these dates as there are traditions and in each house, recipes are usually prepared that are passed from generation to generation. Today I bring you these almond and coconut pastes, a very simple recipe that you can prepare in a few minutes. This is ideal if you are entertaining and don't want to spend too much time in the kitchen.
In addition, these pastas are light and healthy, an extra addition to not neglect good habits even at Christmas. These pastes admit different variations, you can add dark chocolate chips, almond pieces and even substitute the brown sugar for honey or some other natural sweetener. - 125 gr of almond flour
- half a cup of grated coconut
- 6 tablespoons brown sugar
- 2 eggs
- ¼ cup of extra virgin olive oil
- ½ teaspoon baking powder
- 1 teaspoon vanilla essence
- First we put the eggs in a bowl, add the oil and mix well.
- When the oil is well incorporated, add a teaspoon of vanilla essence, mix and reserve.
- In a separate container, we put the dry ingredients.
- First we put the almond flour, then the grated coconut, then the sugar and finally the yeast.
- We mix all the ingredients well with a spatula, it is not necessary to beat.
- Once we obtain a homogeneous dough, we reserve.
- We preheat the oven to 180 degrees.
- Now, we prepare the baking tray with a sheet of greaseproof paper.
- With a spoon, we take small portions of dough and make small balls.
- We place on the tray and shape with our fingers.
- We are putting portions on the tray, being careful to leave enough space between them, although they will not grow too much, it is preferable that they are not too close together.
- We put in the oven and bake for about 12 minutes.
- When we see that the edges are golden brown, we take out the cookies and let them cool on a rack.
