Almond and chocolate panellets

Almond and chocolate panellets. Although the traditional one is made with almonds and pine nuts, they are made with many flavors, such as pumpkin, sweet potato, chestnuts, chocolate….

For All Saints' night, they prepare panelletes, chestnuts, sweet potatoes, funny Halloween cookies, for the children it is very fun to put their hands in the dough that is why we have to prepare the sweets with them. The panellets can be made in different ways, they are simple and can be made with them, since they do not need cooking only at the last moment, you have to put them in the oven for a few minutes and they will be ready.

Ingredients
  • 150 gr. chocolate to melt
  • 50 ml. milk cream
  • 250 ground almonds
  • 200 gr. sugar
  • 1 medium potato
  • 1 egg
  • 1 egg white
  • 100 gr. whole raw almond

Preparation
  1. To make the almond and chocolate panellets, we will start by putting a casserole with water, we put the potato with skin and let it cook until the potato is very tender. When it is, we take it out, let it temper.
  2. We turn on the oven at 200ºC.
  3. In a bowl we put the ground almond, the cooked potato cut into pieces and the sugar. We mix everything very well, it must be a compact mass. We add a little of the egg white to the dough, if we see that the dough is very hard we will put it whole. The dough should not be too light if the panellets will not break.
  4. We wrap the dough with plastic wrap making a roll. We put in the fridge for a few hours or from one day to the next.
  5. In another bowl we put the chocolate with the milk cream, put in the microwave for a minute and melt it.
  6. We take out the dough, take part of it, put it in a bowl and add a little chocolate, mix well. We make balls with this dough and we are putting them on a baking tray, we will put an almond in each piece of dough.
  7. With the rest of the dough we make shapes and we put them on the tray.
  8. We beat the egg, paint the panellets and put in the oven. We leave them 10 minutes carefully not to brown too much.
  9. When they are, we take them out of the oven, let them cool. We use the rest of the chocolate, we pass through the chocolate some panellets, we let the chocolate harden and that's it.
