There is no week that legumes are not part of my menu. I tend to incorporate them at least twice in my meals. In winter in the form of a stew; now, during the summer, mainly in the form of a salad. Is White Bean Salad I will prepare it with zucchini and prawns, specifically, last week.
Salads are a great alternative for combine legumes, vegetables and fruits and thus achieve a complete plate. Also fresh, since in this case all the ingredients are incorporated cold into the salad except for the zucchini, the only ingredient that I have cooked.
One of the advantages of this type of salads is that can be prepared in advance. You can leave them done first thing in the morning and reserve them in the fridge until lunchtime, being able to enjoy the beach or the mountains in peace in the meantime. Do you dare to prepare it?
The recipe
- 1 jar of white beans
- 1 chive
- 12 cherry tomatoes
- 24 cooked prawns
- ½ ball mozzarella cheese
- ½ large zucchini
- Extra virgin olive oil
- Sal Island
- Pepper
- Vinegar
- We rinse the beans under the cold water tap and drain them.
- We put in a salad bowl the beans together with the cherry tomatoes cut in half, the chopped cooked prawns, the chopped chives and the mozzarella cheese.
- Then we cut the zucchini into cubes, season and sauté with a teaspoon of oil in a frying pan until it takes color and is tender.
- Add the zucchini to the white bean salad and season with oil, salt and vinegar.
