Shrimp omelettes, traditional recipe from Cádiz
One of the recipes that fascinates me the most and is traditional in my province, Cádiz, are shrimp omelettes. These tortillas are very typical in the past Carnival of Cádiz, so I have not wanted to wait any longer to do them and get rid of that bug.
Being a typical recipe from Cádiz, sometimes it is not easy to find its ingredients, such as chickpea flour and fresh shrimp. These shrimp are like a tiny prawn species that grows by the seas near said province.
Ingredients
- 100 g of shrimp.
- 100 g of wheat flour.
- 50 g of chickpea flour.
- 1 glass and a half of water.
- 1/2 teaspoon of salt.
- 1 spring onion.
- Fresh parsley.
- Olive oil.
Preparation
Firstly, we will chop both the chives and the fresh parsley very finely. We will put this in a large bowl since they are ingredients of the shrimp tortilla dough. To this bowl, we will also add the mixture of the two flours.
In addition, we will pour the water and we will incorporate the shrimp and the salt, stirring well until you get a fairly liquid dough or cream.
Then, we will prepare a pan with plenty of hot oil and go frying the shrimp tortillas. To do this, we will take a quantity of dough with a ladle and pour it carefully over the hot oil, leaving it fixed so that a round pancake comes out.
Finally, let toast on one side and flip it to be roasted by the other. Take out on absorbent paper to absorb as much fat as possible.
