Today I bring you this delicious Scottish eggs recipe, a simple and very easy to prepare dish, perfect to serve at dinner time or as a starter in a special meal. One of the advantages of this dish is that you can prepare it in advance, since it is richer when it is cold. So you can leave the dish prepared in advance.

In this case, I have slightly varied the ingredients of the original recipe, which uses minced pork. I have used minced chicken meat, like this the fat intake is slightly lightened of this dish. You can use the meat that you like the most, in the kitchen any variant can lead to a wonderful new dish. Let's do it!

Ingredients
  • 4 free range eggs, you can also use quail eggs, you would only have to double the units
  • 400 gr of minced chicken or turkey meat
  • 1 egg for the breading
  • flour
  • bread crumbs
  • shawl
  • virgin olive oil

Preparation
  1. First we have to cook the eggs, we put a pot on the fire with water and salt.
  2. Once the water starts to boil, we add the eggs with the help of a spoon.
  3. Let it cook for about 6 or 7 minutes.
  4. After this time, we move to a container with cold water to warm them.
  5. Once the eggs can be handled, we carefully peel them, wash with cold water, and pat dry with absorbent paper.
  6. Now we have to prepare the meat to wrap the eggs.
  7. We prepare 1 piece of plastic wrap, take a portion of the minced meat and knead it a little with our hands.
  8. Afterwards, we put the meat on the paper, cover it with another piece of plastic wrap and squash until there is a large hamburger and not too thick.
  9. We put the boiled egg in the middle of the meat, and with the help of plastic wrap we wrap it completely.
  10. With our fingers we finish wrapping the egg and we do the same with the rest of the cooked eggs.
  11. We prepare a pan with a good bottom, add olive oil and heat it.
  12. Meanwhile, we are going to bread the eggs, we first go through flour, then through the beaten egg and finally through the breadcrumbs.
  13. Lightly fry the eggs, just a few minutes until golden brown.
  14. We leave on absorbent paper to remove excess fat.
  15. Finally, we prepare a baking tray with a sheet of greaseproof paper and preheat the oven to 180º.
  16. We put the eggs in the oven for about 20 minutes and that's it!
