Ratatouille has always seemed to me one of the great dishes of our gastronomy. I always feel like it, even during the summer. Of course, choosing the coolest days so as not to suffocate excessively with the temperature and the spiciness. Because this ratatouille with diced tofu with paprika is slightly spicy, but it does.

A healthy and complete dish, this is the ratatouille with tofu cubes that I propose today. The base corresponds to that of a traditional pisto; You can find in it onion, green pepper, zucchini, eggplant, tomato and some own license such as carrots. And this recipe is perfect to take advantage of the vegetable remains that we have in the fridge.

The recipe is completed with some cubes of tofu marinated with garlic and paprika. If the tofu seems boring to you, it is because you have not tried to marinate it yet, give it a try! Later, if you don't like it, you can substitute it in future occasions for tempeh, chicken or crispy chickpeas.

Ingredients
  • 2 tablespoons olive oil
  • 2 onions
  • 1 green pepper
  • Carrots 2
  • 2 cayenne chillies
  • 1 large zucchini
  • 1 medium eggplant
  • 2 very ripe tomatoes
  • 1 spoonful of fried tomato
  • Salt and freshly ground black pepper
For the tofu
  • 400 g. diced tofu
  • 300 ml of water
  • 1 teaspoon paprika sweet
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • ½ teaspoon oregano
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon soy sauce

Preparation
  1. We cut the onions, the pepper and carrots in pieces and fry them in a saucepan with the two tablespoons of oil and the cayenne chillies for 5 minutes.
  2. We take advantage of that time to dice both zucchini and eggplant peeled and then we add them to the casserole. Season and cook 10 minutes over medium heat, stirring from time to time.
  3. When these vegetables are tender, we remove the chillies and add the chopped tomato and the fried tomato, cooking the whole for another 10 minutes and then to pay the fire and reserve.
  4. While the ratatouille cooks we prepare the tofu. To do this, we place the water, spices and diced tofu in a pan. Once done, heat over medium heat, cover and let the tofu cook for 8 minutes. Afterwards, we uncover and cook five more minutes or until the water evaporates.
  5. Once it has evaporated, we pour the oil and sauté for 8 minutes, so that the tofu browns.
  6. In conclusion, add the soy sauce, mix and cook the whole for 2 more minutes.
  7. To enjoy this ratatouille with marinated tofu cubes, we will only have to mix everything.
