Those of you who are thinking of celebrating with family and / or friends a party on your terrace or garden taking advantage of the good weather, take note of this recipe! The Lamb Chops With a pistachio crust, they are a great alternative to serve as a main dish, accompanied by grilled vegetables.
For convenience we will prepare the ribs in the oven, although we could also make each cutlet individually on the barbecue. We reserve the barbecue this time to prepare assorted vegetables: eggplant, zucchini, red pepper ... with which to give color to the dish. Do you dare to prepare them?
- 1 kg of rack of lamb
- 200 g. ground pistachios
- 2 tablespoons whole grain mustard
- ½ tablespoon of honey
- 1 lime
- Sal Island
- Black pepper
- Extra virgin olive oil
- Assorted vegetables
- Mix the mustard, honey, lime juice and chopped pistachios in a bowl.
- Season the ribs and batter with the previous mixture on top, pressing so that the mixture adheres to the meat. We reserve half an hour in the fridge.
- Place the ribs on the baking tray and bake at 180ºC for 20-30 minutes, depending on the thickness of the meat.
- While we take the opportunity to prepare grilled slices of aubergine, zucchini or pepper, among other ingredients, to accompany the chops.
- We serve the chops with the vegetables and some pasta forks.
