Octopus salpicón, a delicious and fresh starter to start a meal. A dish that we can prepare in advance or to take away. The base of the salpicón are fresh, raw and varied vegetables, very chopped into small pieces accompanied by any protein, which in this case is octopus and seasoned.

It is a very good starter, it can be accompanied with some prawns, tuna…. The vegetables must be very fresh, since when eaten raw they must be good.

Ingredients
  • Cooked octopus 1-2 legs
  • 1 onion or spring onion
  • 1 red pepper
  • 1 green pepper
  • 1 Tomate

Preparation
  1. To prepare the octopus salpicón we will start by washing and preparing the ingredients.
  2. We cut all the vegetables into pieces. Red pepper, green pepper and onion. We are putting it in a source or a bowl.
  3. Next we chop the tomato and the octopus. We cut the tomato small, you can remove the seeds if you don't like it. The octopus can be cut into slices or small pieces. We add everything to the above.
  4. We mix everything on a plate. If we are not going to eat it at the moment, it can be put in the refrigerator so everything cut without seasoning. We prepare the vinaigrette in a bowl, add 4-5 tablespoons of oil, 2 of vinegar, a little salt and paprika, beat and mix. We reserve until serving time.
  5. At the time of serving it can be put in a source like salad or in individual plates and season it.
  6. We will serve very fresh accompanied by the vinaigrette and a little more paprika for those who want to serve more.
