A simple and healthy dish, since I have prepared them in the microwave, they can also be cooked but that way the potato takes more water and I like it less, but that is to taste.

Ingredients
  • 4 potatoes

Preparation
  1. To make the potatoes stuffed with meat, we will start by cooking the potatoes, we can cook them in a pot with water or we will put them in the microwave, we roll them with plastic wrap for 5-6 minutes, we prick them to see if they are cooked, otherwise we leave them a few more minutes . They can also be made in the oven.
  2. While the potatoes are cooking we prepare the filling. Finely chop the onion and put a frying pan with oil, let it poach over low heat.
  3. When the onion begins to brown, add the minced meat, season it with a little salt and pepper.
  4. When the meat takes color we add the tablespoons of fried tomato, stir it and let it cook for a few minutes. We booked.
  5. When the potatoes are there, we let them cool to be able to handle them better and not break. We cut them in half and with a teaspoon we take out and empty the potatoes and reserve.
  6. We remove the skin from the potatoes carefully.
  7. We join the minced meat with the potato that we will have crushed with a fork, we mix it well.
  8. Taste the dough and if you like it with more flavor, add more fried tomato and mix.
  9. We put the potatoes in a source and we are filling them.
  10. We cover well with the grated cheese.
  11. We put in the oven at 180ºC heat up and down, we leave them until they are golden.
  12. We take out and serve very hot.
