There are many recipes that we discover due to the need or desire to take advantage of those ingredients that we have in the fridge and are about to expire. So I found this mascarpone cake; because of the need to finish a tub of mascarpone cheese and the desire to prepare a sponge cake for breakfast.
It is a simple cake, ideal for beginners. The ingredients are incorporated one by one and beat until obtaining a dense dough that will later grow in the oven. The chocolate did not come in the original recipe but, I could not resist adding some dark chocolate chips.
- 4 eggs
- 200 g. of sugar
- 200 ml. cream 35% mg
- 250 g. mascarpone cheese
- 1 teaspoon vanilla extract
- 300 g. Of flour
- 4 teaspoons of baking powder
- 120 g of chocolate chips
- 1 tablespoon of milk
- We preheat the oven at 190ºC.
- We beat the eggs together with the sugar until white.
- We incorporate the cream, the cheese and the vanilla essence, one by one, beating after each addition until obtaining a homogeneous mass.
- Mix the flour and yeast in a bowl. We add the sifted mixture to the dough and mix with enveloping movements.
- Finally, we incorporate the seeds chocolate and a tablespoon of milk and mix again.
- We pour the dough in a mold whose base we will have lined with parchment paper.
- We bake the cake for about 1 hour or until poking with a stick comes out clean.
- We remove the cake from the oven and let it rest in the mold for 10 minutes before unmold it on a wire rack to cool down.
