A one hundred percent homemade recipe, with a special flavor. Fish are very versatile, they can be baked, battered, grilled or even raw in the form of carpaccio.
Today I bring you the steps to do a rich pickled mackerel. The elaboration is quite simple, but we must take into account a very important detail, do not leave the paprika for long in the fire if you add the other ingredients because it will burn us and give a bitter taste to everything else.
We go shopping and schedule the time.

Preparation time: 30 minutes more what they should marinate.
Ingredients for 4 people:
- 4 mackerels
- 2 Bay leaves
- 3 cloves of garlic
- 150 ml of vinegar
- 100ml olive oil
- Peppers
- Parsley
- Sal Island
Once we have the necessary ingredients we can start with the preparation. We clean the mackerelsWe can ask the fishmonger for it. Once clean we flour them, to fry them in the oil that we will previously have hot.
In the same oil that we have fried the mackerels, add the garlic and let it brown. Now comes the most complicated step, add the paprika, we mix it well and fast.
Now add to it parsley and half a glass of vinegar. We will add this last ingredient to taste, in relation to if we like vinegar more or less. We let the vinegar make a little so that it goes away the force of the liquid. Be careful when adding it because it can splash a lot.
We can already put Mackerel and we let it cook for a while in the same oil and compendium of ingredients.
Now we prepare a container and we fillet the fish, I do it at the end because that way it is easier to manipulate it. Since if I fillet at the beginning, it can break and as we have to let it marinate for a few hours in the fridge with the mixture of ingredients the taste is also limp in the mackerel.
We let the ingredients soak well and cool before covering it to put it in the fridge. About eight or twelve hours, they are necessary for it to macerate well.
