Although it is summer in Spain and it is quite hot, a good plate of lentils should not be missing at least a couple of times in any house. For this reason, we bring you a recipe for lentils somewhat lighter than the one we are used to seeing with chorizo ​​and something more caloric.

In this we have changed the chorizo ​​for ham cubes, and the potato for courgettes. We have also added carrots and onion… It was delicious!

A more dietary and healthy lentils: lentils with vegetables. We have removed the fat almost completely and we have left a rich and very light dish.

Ingredients
  • 400 grams of lentils
  • 2 zucchini
  • Carrots 2
  • 1 cebolla
  • 1 green pepper
  • 4 cloves of garlic
  • Laurel
  • Paprika
  • Olive oil
  • Agua y sal

Preparation
  1. We put in a pot, to 4 guest, a good splash of olive oil. We heat it over medium heat, and while it heats up we go cleaning, peeling and cutting all the vegetables: bell pepper, carrots, zucchini, garlic and onion. We cut everything into small pieces except the garlic, which we will add whole.
  2. We fry everything for about 10 minutes or so and then add the lentils, salt and a little sweet paprika. Let it cook again for another 10 minutes, and when we see that the carrots and zucchini are somewhat more tender, we add the water and add a little salt again.
  3. We leave cook over medium heat for about 30 minutes approximately and we are controlling the water level. We will add more or less water as you like with more or less broth.
  4. When there are approximately 5 minutes to set aside, we will add the ham tacos.
  5. And ready!
