A delicious asparagus cream, simple and quick to prepare, is light and healthy.
- 1 bunch of asparagus (300-400 gr.)
- 3 potatoes
- 150 ml. milk cream
- 500ml. of water or broth

- To make the asparagus cream we will start by washing the asparagus, we will remove and cut the most fibrous part.
- We cut the tips of the asparagus and reserve some, the rest the asparagus we will cut into small pieces.
- We peel the potatoes and cut.
- We put a casserole on the fire, add a little oil, add the asparagus along with the tips, sauté them for a few minutes and add the water. We take some tips and reserve.
- Add the chopped potatoes a little salt and pepper and let everything cook for about 20 minutes or until everything is cooked.
- After this time, we crush the cream until we have a fine cream, if there is a lot of water we remove it and we will add it as we need.
- We put the cream back on the fire, add a little milk cream, stir, taste the salt and rectify. We turn off.
