Galician salpicon, a very complete starter, rich and fresh. The salpicón is a salad where there are several vegetables cut into small pieces and accompanied by seafood such as prawns, octopus, mussels, clams...
But being Galician style, this salad has octopus, very traditional in Galician cuisine, and king prawns, a delicious combination.
It is easy to prepare, we can do it in advance, keep it in the fridge and dress it when serving.

Ingredients
- 1 red pepper
- 1 green pepper
- 1 cebolla
- 2 cooked octopus legs
- 15 prawns
- Olive oil
- 2-3 tablespoons vinegar
- 1 pinch of salt
- Sweet or hot paprika
Preparation
- To make the Galician salpicón, first we wash the vegetables.
- We start by cutting the green and red bell pepper into small squares. We are putting it in a fountain.
- Peel and chop the onion also into small pieces. We can use spring onion which is sweeter to eat in a salad.
- Peel the prawns, remove the heads and the shell from the body. Cut the prawns into small pieces to mix them with the vegetables. Reserve some shrimp to garnish the serving glasses.
- Cut the octopus legs into pieces or slices.
- Add the prawns and octopus legs to the vegetables, mix everything well and leave it in the fridge so that it is very cool when serving.
- We prepare the dressing, in a small bowl we put a good jet of olive oil, a few tablespoons of vinegar and salt, mix well.
- When serving, you can add the dressing and sprinkle with sweet or spicy paprika.
- You can also serve the dressing at the table and let each diner dress it to their liking.
