Ingredients
  • A 2-3 kg octopus
  • 5 potatoes
  • Sweet or hot paprika
  • Buy
  • Gorda

Preparation
  1. If we buy fresh octopus, it is best to freeze it for 48 hours, we will remove it the day before cooking it and leave it in the refrigerator to thaw, this is so that the fibers break and thus it does not become hard.
  2. We take the octopus and clean it well under the tap. We put a pot on the fire with plenty of water to be able to be made of stainless steel, when it begins to boil we take the octopus by the head and submerge it in boiling water, leave it for a minute without releasing it and take it out, up to three times, this is known as scare the octopus, and leave it in the water, cooking over medium high heat for 45 minutes or 60 minutes, depending on the size. We put the washed potatoes with their skin inside the pot with the octopus, until they are cooked. If you can't cook them separately, but that way they get the flavor of the octopus.
  3. To know if it is, it will be punctured by the thickest part of the tentacles.
  4. Once the octopus and the potatoes are there, we take them out and let them temper.
  5. We peel the potatoes, cut them into slices and we put them as a base on a plate or the typical thing is a wooden plate, we put salt, oil and a little paprika, then we cut the octopus into slices with a knife or the traditional thing is to cut it to scissors, we put it on top of the potatoes and add oil, paprika and salt.
  6. And ready!!!
  7. If you don't want to do the first step, they sell the octopus frozen and even already cooked. But prepared at home it is much better.
