Galician clams

Galician clams, a very simple dish, a traditional Galician recipe. An ideal dish for an aperitif or a starter.

Una simple recipe with few ingredients we have them prepared. The essential thing for this dish to be good for us is that the clams are fresh, so it will be a rich and tasty dish.

Ingredients
  • ½ kilo of clams
  • ½ onion
  • 1 garlic clove
  • 150 gr. fried tomato
  • 100 ml. white wine
  • 1 teaspoon sweet or hot paprika
  • 1 tablespoon flour
  • 1 handful of chopped parsley

Preparation
  1. We will put the clams in cold water with a good handful of salt, so they will release all the earth. We will have them for a couple of hours. On the other hand we chop the onion and the garlic clove.
  2. After this time, we throw the water from the clams, wash them well under the tap to remove all the dirt. We put the clams in a casserole with a little glass of water, put over medium heat, cover them and leave them until they open for 3-4 minutes. Do not leave them too long, if they are cooked too much then the meat will be very tough. We remove from the fire, we reserve. We will save the cooking water.
  3. We prepare the sauce. In a wide casserole, add a splash of oil, add the onion and let it fry. When it begins to take color, add the minced garlic, let the garlic not burn for a minute. Add the tablespoon of flour, mix, then add the paprika, stir again and add the fried tomato, mix well.
  4. Add the white wine, let it cook 2-3 minutes for the alcohol to evaporate.
  5. Then we add the strained broth of the clams, the amount to taste, but it is better to add a little and as you add. Taste it and add a little salt.
  6. Once the sauce is to your liking, add the clams, mix well. Chop the parsley and add it.
  7. Let the clams cook for a few minutes with the sauce. You have to stir so that the clams are mixed with the sauce.
