Fried sardines

Fried sardines is a traditional dish in the summer timeThey are not lacking in coastal areas or in the southern part that cook them very good. They are simple to prepare and very tasty, they are usually prepared on the grill or fried.

Sardines are an oily fish with many nutrients and that should not be missing in our diet. When preparing this recipe it is important that the sardines are very fresh and if you are lucky with your fishmonger they should clean them for you.

With this fried sin and a good salad we have a very summery full plate, it only remains to accompany it with a beer.

Ingredients
  • 700 gr of clean anchovies and boneless
  • batter meal for fish
  • salt and pepper
  • olive oil
  • half a lemon, sliced

Preparation
  1. We will start by cleaning the sardines, we will remove heads and guts and clean them from the scales, we will wash them well under the tap. If they clean them in the fishmonger, better
  2. We open them and remove the central spine and those that can be on the sides, also between the two fillets there is a strip with thorns, we remove it because it is uncomfortable when eating.
  3. We will put them on an open plate, dry them well. We salt them and drain a little lemon and pepper.
  4. We will put a pan with plenty of oil to heat, in another plate we will put the special flour for frying, this does not need an egg.
  5. When the oil is hot, we will pass the sardines through the flour that are well coated and we will fry them in batches. We will have a plate prepared with kitchen paper and with the golden shape we will take them out and put them on top of the paper so that it absorbs the excess oil and so on until we have all the sardines ready.
  6. We will put them in a source accompanied by a salad and if you like we will put some lemon slices.
  7. We will eat them hot and crisp.
  8. And to eat!!!
