French toast with plums and ricotta

We started the weekend by preparing a breakfast "of kings". A breakfast that is not prepared in five minutes, nor in 15, but that is worth trying. French toast combined with roasted plum chunks is a great alternative to start your morning with energy.

What if we also add ricotta cheese to the equation? It is an option but it is not essential. The dish wins in presence, no doubt, but also in calories. So it is up to you to prepare it to the letter or eliminate the cream cheese and replace it with a little icing sugar or honey.

Ingredients
  • 12 slices of Challah or Brioche bread (2cm thick)
  • 4 eggs L
  • ¾ cup of milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 4 tablespoons of butter
  • Roasted plums
For the roasted plums
  • 5-6 ripe plums, cut into chunks
  • 4 tablespoons sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
For the ricotta cream
  • 1 cup ricotta
  • ½ cup icing sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • ⅓ cup of whipped cream

Preparation
  1. We preheat the oven at 200ºC and line the baking tray with parchment paper.
  2. In a bowl, we mix all the necessary ingredients to prepare the roasted plums. Mix well and place the plums well spread on the baking tray. We roast 15 minutes until they soften.
  3. While we whip the cream and mix in a separate bowl the ricorra cheese with the sugar, the zest and the lemon juice. Once beaten, we add the cream and mix until integrating with enveloping movements. We reserve in the fridge.
  4. In a tray with a certain depth, we beat the eggs, milk, vanilla extract, cinnamon and nutmeg.
  5. We heat a frying pan and melt a tablespoon of butter.
  6. Soak the bread slices in the egg mixture and we fry 1-2 minutes on each side, until golden brown. We repeat the process, adding butter to the pan, until we finish with all the slices.
  7. We serve with the roasted plums and ricotta.
