Egg and tuna croquettes
Last day we taught you to make very healthy cannelloni with hard-boiled egg and tuna and, as nothing is thrown away in the kitchen, I took advantage of the same filling of those cannelloni to make delicious croquettes, which have really been a success.
These homemade croquettes are always very well received by everyone, both adults and children, so it is a good quick healthy dinner. In addition, they can be used as a cover or hot appetizer to open your mouth for the first dishes.
Ingredients
- 3 boiled eggs.
- 2 cans of tuna.
- 1/4 onion.
- Olive oil.
- 2 tablespoons of flour.
- Milk.
- I beaten egg.
- Bread crumbs.
Preparation
Firstly, we will cook the eggs in a small saucepan with water for about 10 minutes. We will let it cool and we will chop it into small cubes.
Then we will make a bechamel thick enough so that after cooling, the croquettes can be made without too much difficulty. To this bechamel we will add the chopped egg and the two cans of crumbled tuna. We will place it in a high source and let it cool.
Then, we will take small portions of the croquettes dough, either with spoons or with our hands, and we will make the typical shapes. These will be breaded in beaten egg and breadcrumbs.
Finally, the we will fry in a frying pan or deep fryer with plenty of olive oil. We will serve them accompanied by a sauce such as mayonnaise or ketchup.
