Easter thread

On the Sunday following the first full moon of spring, in the northern hemisphere, Christians celebrate Easter. The gastronomic traditions for this festival are very varied depending on the regions or countries. Today we are going to prepare a Easter thread, a traditional sweet from many places, which as a peculiarity is decorated with colored hard-boiled eggs. Eggs have been considered by many peoples as symbols of fertility, birth, continuity of life. In the Christian tradition, both the hard and the chocolate ones refer to the new life that begins with the resurrection of Jesus.

In this preparation it is difficult to stipulate the processing time. We could say 30 minutes, but to this you must add the time you must let the dough rise. Therefore, think that it will not be ready in less than five hours, so you can make it from one day to the next.

Ingredients

Mass

  • 50 gr of fresh yeast
  • 3 tablespoons of flour
  • 100 cc of warm milk.
  • 730 gr de harina
  • 150 g sugar
  • 3 eggs
  • 120 g of soft butter
  • 2 tablespoons honey
  • warm milk, amount needed
  • lemon zest
  • pinch of salt
  • 1 teaspoon vanilla or orange blossom water

Filling

  • 500 cc of milk
  • 2 eggs
  • 150 g sugar
  • 1 teaspoon liquid vanilla
  • walnuts, raisins, dried cranberries

Coverage

  • honey, or icing sugar with juice of half an orange
  • 2 painted eggs

Preparation

First we are going to prepare the ferment, we put in a bowl, rather deep, the yeast, flour, and warm milk, we can also put a tablespoon of sugar.

Stir until the yeast dissolves, cover with a cloth and let it rest in a warm place for about two hours.

When we have the ferment ready, which has tripled or quadrupled in volume, we begin to prepare the dough. In another bowl we put the eggs, sugar, honey, vanilla and lemon zest. We beat until well mixed and then we add the butter.

We beat the butter with the whisk, taking care not to stop, as we already know if we stop beating we run the risk of cutting the mixture. Then we add the flour, the salt, and the yeast. We stir the ingredients forming a dough, and add the amount of milk that is needed.

We knead with our hands to form a bun. We place it in a rectangular container to be able to divide the dough into three equal pastes.

We arrange the three portions on a tray and let them rise until they double in size.

While the dough rises, we take the opportunity to prepare the cream that we will use as a filling. In a saucepan we put the eggs, the sugar and the vanilla, stir until we get a cream, and add the hot milk. We take it to a minimum heat without stopping to stir until it thickens. Let it cold down.

Now we prepare a table to assemble the thread. With a rolling pin we knead each portion of dough, obtaining long rectangles 1 cm thick. In each one we spread the cream taking care that it does not reach the edges so that we can later close them. On the cream we spread the walnuts, raisins and blueberries.

We close each rectangle and then fold each one on itself, obtaining three cylinders.

We join the three cylinders at one end and we braid them. We screw the braid obtained, getting our thread. Finally we paint it with beaten egg with a tablespoon of honey.

We take it to the oven until it is cooked and golden. In hot we cover with a bath of icing sugar dissolved in the juice of half an orange, or we paint with honey, we put the colored eggs by pressing gently. Clever!!!!!

For this year Easter is behind us, but you can practice, it is ideal for snacks or to accompany a coffee.

It is better that you wait for it to cool to eat it !!!
