Vigil Potaje

En Easter or Easter Catholic tradition establishes that on Good Friday and Ash Wednesday, you have to fast and abstinence from any food throughout the day, and this sacrifice reaches the Friday of Lent where this abstinence will only be from foods made with any type of meat .

Times have changed, but there are people who still carry out these traditions, so today we teach you to make a potage waking, very traditional for many years, where meat and sausages are replaced by cod, which was cheap at the time.

Ingredients

  • 300 g of chickpeas.
  • 2 garlic cloves.
  • 4 slices of bread.
  • 1 handful of whole almonds.
  • Sweet paprika.
  • 1/2 onion.
  • 2 tomatoes.
  • 2 potatoes
  • 2-3 pieces of cod.
  • 200 g of spinach.
  • Thyme.
  • Oregano.
  • Dash of food coloring.
  • Pinch of salt.
  • Olive oil.
  • Water.

For the croutons:

  • Hard-boiled egg.
  • Toasted bread.

Preparation

First, we will put the chickpeas soaked the previous day. After tonight, we will throw that water and put a new one, rinsing the chickpeas well. We will put these to boil alone over medium-low heat.

We will carry out a nice toasting in a frying pan with a little olive oil, the almonds, the slices of bread and the sliced ​​garlic. We will pass this to a mixing glass where we will add 1 teaspoon of sweet paprika and chopped parsley. We will crush with a little of the chickpea broth and reserve.

In the same pan, we will fry some bread cubes to make croutons. In addition, we will cook 2 eggs in a small saucepan to later decorate with chopped egg.

In the same pan where we have toasted the bread, we will poach the chopped onion and then we will add the tomato. When the stir fried is well depleted we will return it to the pot of chickpeas. In addition, we will add the spinach washed and cut into medium pieces.

Finally, we will add the majao to the pot and stir well. Then we will add the pieces of cod cut into medium pieces and the potatoes cut into small cubes. We will cook for about 20-25 minutes. We will serve each portion with a little croutons and chopped hard-boiled egg.
