Dressed potatoes
Dressed potatoes are a very good alternative when we don't know what to cook but we have some potatoes and some vegetables. It is as easy as cooking them and adding some of the available ingredients.

Ingredients
  • 1 kg of new potatoes
  • 2 cucumbers
  • 1 green pepper
  • 1 fresh onion
  • 3 eggs
  • 3 cans of tuna in sunflower oil
  • Sal Island
  • Apple vinager
  • Olive oil

Preparation
  1. In a pot with plenty of water, we cook the new potatoes. They must be good to cook, these will peel better and will also cook earlier than if they are old. The cooking time depends a lot on the potatoes. Ours were boiling for a few 20 minutes approximately, but to know when they are ready to set aside is as easy as sticking the tips of a fork into them and thus checking that they are soft but not too soft.
  2. While they are cooking, we also boil 3 eggs in another container.
  3. We take a large bowl and for now we will add the fresh onion previously peeled, cut into cubes, together with the two cucumbers, also peeled and cut into thin slices together with the pepper. To this mixture we will add later, the peeled potatoes and cut into medium cubes together with the boiled eggs. The we will dress as if it were a normal salad: with olive oil, vinegar and salt, and we will put it in the refrigerator for about 30 minutes.
  4. Seasoned potato salad ready to eat!

Notes
You can add other types of vegetables: tomatoes, red or yellow peppers, lettuce, etc.
