Cod Portuguese

I like it Portugal, and above all, their food. There you can taste the most delicious cod in the world. Any recipe for cod is prepared like nobody else. So today I wanted to present you this plate of Cod with paprika, fantastic for our meal of Christmas that can be part of a rich Christmas menu very economic.

For this recipe we are going to use desalted cod. You can desalinate it yourself or buy the loins already at the right point of salt (I personally like the ones from Mercadona). If you choose to desalinate them, you will have to have them at least 48 hours, changing the water. 3 times and keeping it in the fridge.

Be careful, in the recipe we are hardly going to use salt because the cod is already salty enough.

We are going to pair our cod with some fried potatoes that we will finish making in the oven. Do you want to know how this recipe follows?

Ingredients (4p)

  • 4 cod fillets
  • Small potatoes 4
  • Flour (to flour the cod)
  • 200 gr of oil for frying
  • 1 large tablespoon of paprika
  • 50 ml of white wine
  • 50 ml water
  • a pinch of salt
  • piquillo peppers cut into strips

Preparation

It is very important that the cod fillets are well dry. For this we can let them drain for several hours and then dry them with kitchen paper.

We cut the potatoes as for an omelette and reserve.

We put the 200 gr approximately of oil in a frying pan and heat to medium-high heat.

We fry the potatoes until they are golden and crisp and place them in a suitable ovenproof dish, sprinkle with a pinch of salt (very little) and reserve.

We pass the loins in flour and fry. We want them to be roasted on the outside but not done on the inside (they will finish cooking in the oven). We will have them approximately 4 minutes for each side. We place them on top of the potatoes that we had reserved.

We filter the oil in a jug and add 100 gr / ml (approximately half a glass) to the pan. We heat up and turn off the fire. We cast the peppers and stir well. Add the water and wine to the pan (all with the fire already off) and stir well. Add the potatoes and cod on top. Place the piquillo pepper strips on top and between the potatoes to taste.

We heat the oven to 170 º (heat up and down) and bake the cod for 15 minutes.

We serve immediately.
