Coca De llanda

Coca de llanda is a typical Valencian coca, very good for a breakfast or snack. This same recipe can be made with yogurt, it varies according to the area, but they are just as good. When I tried it I really liked it, they gave me this recipe and the truth is that it is worth trying.

For this coca de llanda, soda sachets are used instead of baking powder, it is super tender, juicy and spectacular !!!

As well You can vary the lemon zest, by orange zest, what you liked the most, or so you can change the flavor of the coca.

Ingredients
  • 5 eggs
  • 2 glasses of sugar (300gr.)
  • 2 glasses of milk (400ml.)
  • 1 glass of mild olive oil (200ml.) Or sunflower
  • 500 gr. Of flour
  • 4 sachets of double raising agents or 1 sachet of baking powder
  • Lemon zest
  • Ground cinnamon
  • 2 or 3 tablespoons of sugar

Preparation
  1. The first thing we will put to heat the oven to 180º.
  2. In a bowl we put the eggs, the sugar and beat until it has increased in volume, then we add the oil, mix, the milk and the lemon zest, mix well again.
  3. We incorporate the flour, we sift it first and then we will incorporate it little by little, once the flour is mixed we add the sachets of raising agents and mix.
  4. In a baking tray we spread it with butter and line it with greaseproof paper, we throw the coca mixture into the mold.
  5. We will sprinkle the entire surface of the dough with the sugar and cinnamon.
  6. We will introduce it to the oven, after 30 minutes we will prick with a toothpick, if it comes out dry it will be ready, if not we will leave it for a few more minutes or until it is ready, it varies according to the oven.
  7. Let cool and it will be ready.
  8. It is a great cut and it is very rich.
  9. Take advantage!!

    I haven't eaten it for a long time (I came to work in Seville)
    But my mother and grandmother did it often and it was delicious
    They made it in a Llanda that is like a rectangular mold about 40 cm long by 30 wide and about 6-7 cm high in all my region I did not see another mold, only in movies and books, except one that was circular 20 cm lower diameter and about 30-35 cm higher which was for the «almond cake» for special occasions
    I may find the recipe, but I can't guarantee it (it was so good)
    I don't know if you will find a Llanda from yesteryear but you can try it with a shallow rectangular mold.

    I have tried making it with Royal and I am not getting the fluffiness that I have tried before.
    When you mean 4 double envelopes is a total of 8 envelopes?
