There are cakes that are a classic and that they have a great tradition on certain holidays. this tart cookies, chocolate and flan, For example, it is very popular on birthdays and everyone likes it! With a classic flavor combination, few are able to resist it.

Are you lazy to turn on the oven? You will not need to do it to prepare this cake. It is a cake that cold curdle and that it is also taken fresh, so it is a great alternative for the coming summer months. And you can decorate it in a thousand ways, making it look like a different cake each time.

I have not decorated it too much, because it did not celebrate anything. I made it simply to give ourselves a sweet treat. But you can do it with the chocolate ganache itself and a pastry bag. Or with cream, why not! Or put some cookies on top... Be creative!

Ingredients
  • 400 g. dark chocolate couverture
  • 400 ml. whipping cream
  • rectangular cookies
  • 1 liter of milk
  • 90 g. of sugar
  • 2 envelopes of flan preparation
  • 1 teaspoon cornstarch

Preparation
  1. We start preparing the ganache of chocolate. To do this, heat the cream in a saucepan and when it begins to boil, remove it from the heat and add the chopped chocolate. Then, we stir until the chocolate is melted and then we divide the cream into two bowls that we will cover with cling film “skin” and put in the fridge so that it takes consistency. About three hours.
  2. Once done we prepare the mold lining it with acetate to be able to remove it easily and that the edges come out clean. We booked.
  3. When the chocolate cream has already taken shape we make the flan For this we pour 800 ml. of the milk in a saucepan with the sugar. Heat, stir and bring to a boil.
  4. While we wait for it to boil, dissolve the preparation envelopes for flan and the teaspoon of corn starch in the 200 ml. remaining milk.
  5. When the milk starts to boil, remove from the heat and we pour the flan mixture, stirring until integrated. Once achieved, return the saucepan to the heat and, stirring constantly, cook over medium heat until it starts to boil again. We will thus have obtained a thick cream that we will remove from the heat and cover until ready to use.
Assembling the cake
  1. Now that all the preparations are done, we place a cookie base. On the basis of cookies, a layer of flan, another of cookies, a new layer of flan and another of cookies.
  2. Then, we take one of the two bowls of ganache out of the fridge, stir it so that it warms up a bit and is more manageable and we put half on the last layer of biscuits, well spread.
  3. Then we repeat the previous steps placing a layer of cookies, a layer of flan, cookies again, flan again, cookies and another layer of chocolate.
  4. Finished the assembly, we cover the cake and the we put in the fridge All night long.
  5. The next day, unmold and decorate with the rest of the ganache.
