Today I leave you the recipe to prepare a great sponge cake with carrots, very easy to prepare. It is very good with a nice orange color, a juicy and moist carrot dough, it is great for a breakfast. It also serves as a base to prepare it with a filling, cover it with sugar, cream or chocolate. This carrot cake is so simple, that it serves as a base to prepare delicious cakes.
Carrots are rich in carotene and antioxidants, raw or cooked they are very good and cannot be missing from our diet.

Ingredients
- 250 gr. carrots
- 125 ml. mild olive or sunflower oil
- 4 eggs
- 200 gr. sugar
- 200 gr. Of flour
- 1 sachet of backing powder
Preparation
- We wash and grate the skin of the carrots, we will cut them into small pieces and we will leave about 50 gr. to grate it and so that the carrot strips can be seen between the cake.
- We will crush the carrot cut into pieces together with the oil. We booked.
- In another bowl we will put the eggs and sugar, we will beat it well.
- Once it is beaten, we will add the crushed carrot.
- We will mix and add the grated carrot.
- Finally we will incorporate the sifted flour together with the yeast, little by little until it is well integrated.
- We take a mold and we will spread it with a little butter and flour.
- We will have the oven on at 160º, we will put the dough in the mold and we will introduce it to the oven for about 40 minutes, depending on the oven.
- When we see that it is ready, this will be when the center comes out dry with a toothpick, we will remove it from the oven and let it cool.
- The mold I used is 20 cm. The carrot cake is high, if you want it lower, put the 22 cm-24 cm.
- And voila, you just have to eat it as is or cover it with what you like.
