But battered and fried a delight, if they are very caloric but are delicious, for this we will remove the excess oil.

Preparation
  1. To prepare the battered aubergines, we will start by washing the aubergines, we cut them into slices that are neither too thin nor too thick as 1 cm.
  2. We will put the aubergines in a source, we salt them and we leave them for about 30 minutes so that they release the bitterness. They can also be covered with water and salt for an hour to further remove the bitterness.
  3. Once they are ready, drain them well and dry them with kitchen paper.
  4. In a plate we will put flour and in another we will put the eggs previously well beaten.
  5. We put a frying pan on strong fire, but without smoking and burning the oil, with plenty of oil to heat.
  6. Once the oil is there, we will first pass the aubergines through flour, shake the flour a little and then pass them through the fire.
  7. We are throwing them into the pan and frying them on both sides, until they are golden brown. We will fry them in batches and with care that the oil is always very hot, so the aubergines will be very crispy.
  8. We are taking them out and we are putting them on a plate where we will have kitchen paper so that it absorbs the excess oil.
  9. Then we are putting them in a source and we immediately serve hot and crisp.
