Baked eggplants

Baked aubergines, a simple and healthy way to eat aubergines. They prepare very quickly and are very good. They are ideal for a snack, an appetizer or to accompany any meat or fish dish.

Eggplants are very good, fried or battered they are a delight, but it is a vegetable that absorbs a lot of oil and this adds a lot of calories. Although it is not the same, they are very good in the oven, they can be battered or made without batter.

Ingredients
  • 1-2 eggplants
  • 1 glass of milk
  • Bread crumbs

Preparation
  1. To prepare the baked aubergines, first we will heat the oven to 200ºC. with heat up and down.
  2. Wash the aubergines and cut them into not very thick slices, the thinner the more crispy they are.
  3. In a bowl we put the glass of milk and add the aubergines, if they are not covered with milk, you can add a little water and mix with the milk. We leave them for about 30 minutes, moving them so that all the slices soak.
  4. We take out the aubergines and we pass them through the breadcrumbs, we put them in a baking tray where we will have put a sheet of parchment paper. We place them one next to the other, so that they are not assembled. Add a little salt and if you want at this time add a splash of oil.
  5. We put the tray with the aubergines in the oven and let them cook and brown, about 15-20 minutes or until they are ready, it can vary depending on the oven and the thickness of the aubergines.
  6. When we see that they are golden we turn off the oven. And we serve!!!
  7. You can put a splash of honey on top.
