Preparation
  1. To prepare the artichoke omelette, the first thing to do is to clean the artichokes, we will cut the stem and remove the first leaves, which are the hardest, until we reach the most tender leaves.
  2. We will put a bowl with water and the lemon juice and we will leave the artichokes clean so that they do not oxidize, when all the artichokes are clean we will cut them into thin slices.
  3. In a pan we put two tablespoons of oil we add the artichokes.
  4. We will put the pan over medium heat and cover so that they are done little by little.
  5. While in a bowl, we will add the 4 eggs and beat them.
  6. When the artichokes are well browned, take them out of the pan, drain them well with the oil, put them on a plate with a sheet of kitchen paper so that all the oil drains, and add them with the eggs and a little salt. we mix well so that all the ingredients are well integrated
  7. We put a jet of oil in a pan and pour all the mixture into the pan, to make the omelette.
  8. We stop cooking, when we see that the curd omelette is around, we turn around and let it finish cooking to our liking.
