Almond cookies

I love to bake cookies and enjoy them for snack and the weekend is a great time for that. These almond cookies, Inspired by a recipe by Jane Asher, they are a good resource for when time is of the essence, simple and quick.

To prepare them, basic ingredients and a touch of almond are used that gives them a special flavor and texture. You can use different types of almond: ground almonds, crocanti almond or a combination of both, to your liking! In 30 minutes you can enjoy some fantastic cookies. A basic recipe to add to your cookbook along with the eggless chocolate cookies.

Ingredients

12-16 cookies

  • 65 g of sugar
  • 120 g butter (at room temperature)
  • 1 egg (lightly beaten)
  • 1/2 teaspoon of vanilla essence
  • 50 g of ground almonds (or a combination of ground almonds and crocanti)
  • 135 g flour
  • Crocanti or almond slices to decorate
  • Icing sugar to decorate (optional)

Crafting

We preheat the oven at 190º with heat up and down.

We beat in a bowl with the help of electric rods, the butter and sugar until a creamy mixture is obtained. Then we integrate the egg and the vanilla essence until we achieve a uniform mixture.

We incorporate the almond ground and the flour little by little mixing with a wooden spoon. Once done, we let the dough rest for about 10 minutes, time that we take advantage of to place parchment paper on the baking tray.

With the help of a dessert spoon, we take piles of dough and depositing them on the baking tray, leaving a few centimeters between heap and heap (the cookies expand in the oven). On top of these we place crocanti or almond slices and press lightly (don't worry if some of them fall off during baking).

We bake the cookies for 15-20 minutes until golden brown. Remove from the oven, sprinkle with icing sugar and let them cool completely before serving.

Notes

This time I have used crocanti as decoration because I did not have almond slices at home. With the sheets the result is more striking and you will achieve a more beautiful presentation.

      I have not tried using shirley oatmeal but it might work. The bran has a very mild flavor and you could use flakes for decoration. If you decide to do the test, tell us the result!
