This Russian salad is light and refreshing. Cauliflower is the main ingredient of it, although it also has onion, carrot, apple and Some chickpeas! If you read correctly, chickpeas. These, in addition to providing consistency to the salad, make it much more complete.
The salad can be seasoned with oil and vinegar, however I preferred to add mayonnaise this time. This makes it ideal for prepare sandwiches and sandwiches, but also as an accompaniment to any meat or fish dish. It won't take you more than 15 minutes to prepare it, promised!
The recipe
- ½ large cauliflower
- 1 small pot of cooked chickpeas (200g.)
- 3 grated carrots
- 1 scallion, chopped
- 2 apples
- Sal Island
- Pepper
- 2-3 tablespoons mayonnaise
- In a saucepan with plenty of water we cook the cauliflower in florets 6 minutes or until tender.
- Meanwhile, we wash the chickpeas under the stream of cold water.
- Once washed, we place them in a bowl and we chop them with a fork. We do not have to puree them, they must be small pieces and there may even be a whole chickpea.
- Then add the grated carrot and the onion, one of the apples and the chopped cauliflower.
- Season and mix well all the ingredients.
- Then we add the mayonnaise and we mix again.
- We serve the cauliflower and carrot salad decorated with the second apple.
